Chocolate strawberry mojo


Ingredients

  • 3 oz Kō Hana KOKOLEKA

  • 4-6 strawberries or 8-12 raspberries

  • 1 oz strawberry simple syrup*

  • 8-10 mint leaves 

  • sparkling water

  • chocolate covered strawberry & mint for garnish

*Strawberry Simple Syrup Ingredients

  • 10 oz fresh strawberries

  • 1 cup granulated sugar

  • 1 cup water

Preparation

How to make strawberry simple syrup...

Trim the stems off the strawberries and cut into halves. In a pot, simmer the water, sugar, and strawberries for about 20 minutes. Let cool and fine strain into a storage bottle for future use. Store in the refrigerator for up to two weeks.

Prepare the cocktail…

Muddle berries and Kokoleka in a shaker tin & give it a dry shake. Gently muddle mint and strawberry syrup in a glass and fill with ice. Double strain the Kokoleka and berries into the glass and top with sparkling water. To stir, pull ingredients up into water to preserve the carbonation. Garnish with a bouquet of fresh mint and a chocolate covered strawberry.
