Distilling

Our distillery and production team at Kō Hana Distillers are masters of their craft, dedicated to creating one of the world's finest cane rums from the moment it leaves the cane field until it is carefully bottled. With meticulous attention to detail, we orchestrate every step of the process, starting with the fermentation of cane juice. Through a delicate balance of art and science, our team expertly distills the fermented juice, capturing the pure essence of the sugarcane's flavors. Our rum is then lovingly aged in carefully selected barrels, allowing it to develop remarkable depth and complexity. Finally, our team ensures that each bottle is filled and labeled with utmost precision, embodying the dedication and passion that goes into every sip of Kō Hana Hawaiian Agricole Rum.


Barrel Aging

At Kō Hana Distillers, the process of barrel aging is an art form that complements the unique flavors of the sugarcane we grow. Our team takes pride in aging rum in first-use American oak barrels, meticulously designed to enhance the maturation process. These barrels play a vital role in imparting distinct characteristics to our Hawaiian Agricole Rum. In addition to these custom barrels, we also employ second-use barrels, allowing for a fascinating interplay of flavors. As the rum rests within these barrels, the tropical climate of Hawai’i lends its influence for a maturation process that is truly exceptional. The result is a perfectly aged rum that captures the essence of the sugarcane and Kō Hana's dedication to craftsmanship and innovation.

Koa

Kō Hana has the worldʻs first ever Koa wood finished rum. This rum rests in American oak barrels, then is finished in Hawaiian Koa wood barrels. The two-year aging process results in a phenomenal spirit that offers a full-bodied experience with a palate full of flavors. The initial burst of cherry and cinnamon is tempered by the smoothness of anise and the richness of tobacco. Proofed to 50% Abv with a distinctly red hue.

Historically, Koa wood was used by early Hawaiians to build seafaring wa’a (canoes), surfboards, tools, and ukuleles. Koa was considered the wood of Hawaiian royalty. Today, Koa is one of the most valuable hardwoods in the world.
